Owner Chef Keiji

Keiji was trained by master sushi chef Shiro Kashiba at the famous Sushi Kashiba. He began his sushi career as an apprentice at Sushi Kappo Tamura in Seattle after which he learned traditional techniques at Shiro’s Sushi. Born and raised in the coastal town of Fukui, Japan. With LTD edition, Chef Keiji is “going back to his roots” by preparing the most authentic and highest quality Omakase menu possible.

 

“ I was born and raised in Japan with Japanese street culture, dance music, fashion, art and of course food. I came to USA as a DJ back in the mid 90’s and it was a complete culture shock to learn the bigger world outside and I decided to live abroad permanently”.

“At one point in my life I made a decision to run a restaurant in the future. I could not be happy with my previous job of wheeling and dealing and traveling around the world for party events and was seeking a new career. When I was thinking about a new career there were two things on my mind. One, it must be community based business that I can build and two, it’s something with native Japanese traditional skills. I realized sushi restaurant was the perfect for that”

“When I decided on this new career path our daughter was born and that helped give me the focus to change my lifestyle and trained very hard. Working at a sushi bar has live feeling and is similar to DJing to the audience. I also like the analog restaurant business in contrast to this new digital world.”

“After experiencing the Covid lockdown it really made me think it’s time to open my own restaurant. Maybe this is crazy idea but I want to share the traditional Japanese style of sushi with younger audience. I hope they like it.”

Head Sushi Chef - Jun Kobayashi

Born in Japan and raised near the ocean, Jun loves everything about fish. Catching, cooking, preparing and eating it! After high school, Jun worked as a part-time Sushi assistant. In 1998, he came to Olympia, Washington to attend the Capitol City Tennis & Athletic Center, where he remained for two years. Following his tennis training, he went to work for renowned Maneki restaurant in Seattle’s International District where he worked until 2013. Chef Jun joined Shiro’s in January 2014 and worked as head chef for 7 years, before joining Ltd Edition sushi as our executive chef.
